Souper Spooky Pumpkin Recipe

It’s Spooky season, which means that it’s the time of the year that everyone goes pumpkin spice crazy! Pumpkins are in season all Autumn long, and don’t have to be just for Halloween. But if you’ve ventured out to a pumpkin patch recently, we have a recipe which will make perfect use of your findings.

Anglia Square is the perfect place to get everything you need to transition your home from Summer to Autumn, with Halloween costumes and decorations from Poundland and QD, whilst also grabbing seasonal produce from Robert Brand Fruits and all the ingredients you need from Iceland.

To make your own pumpkin soup you will need:

2 tbsp olive oil

1 pumpkin or squash

2 onions

700ml vegetable stock

150ml double cream

salt, pepper & additional seasoning to taste (try chilli flakes or sage!)

Method:

Dice the pumpkin and onion.

Heat olive oil in a frying pan.

Add onion and saute until soft, around 5 minutes.

Add pumpkin and cook until beginning to soften, stirring occasionally, for 10 minutes.

Add vegetable stock, season and bring to a simmer, cooking until the pumpkin is completely soft.

Add double cream and bring back to a boil.

Puree the soup with a hand blender, or alternatively, transport into a blender.

Serve with warm bread or croutons.
